SPRING CHICKEN SANDWICH

ingredients

1 Stone & Skillet English Muffin

  • Green Goddess Dressing (recipe below)
  • 4 oz skinless/boneless chicken breast
  • 1 cup Panko breadcrumbs
  • 1/4 cup basil pesto
  • 1/4 flour
  • 1 egg
  • 2 strips bacon
  • 1 Boston bibb lettuce leaf
  • 1 slice cheddar cheese

Green Goddess Dressing

  • 3/4 mayonnaise
  • 3/4 sour cream
  • 1 minced clove of garlic
  • 2 T lemon juice
  • 3 T chopped chives
  • 1/4 cup tarragon
  • 1/2 cup parsley

preparation

  1. Preheat oven to 350F
  2. Fry bacon and set aside
  3. Place panko crumbs in a small cookie sheet or pie dish and place in oven for 10-15 minutes, until they are golden brown
  4. Mix pesto into bread crumbs thoroughly
  5. Place flour and whisked egg in separate bowls
  6. Coat chicken in flour, then in egg, then in panko mixture
  7. Put chicken on baking sheet and into the oven for 15-20 minutes
  8. After 10 minutes of chicken cooking, slice english muffin and place cheese on bottom half and place in oven on baking sheet until melted
  9. To assemble, place lettuce and bacon on the bottom muffin. Top with chicken and Green Goddess Dressing.

  1. Mix all ingredients in a blender
